Picking Your Pig

At 179 FarmS, our Pick Your Pig Program offers a truly unique farm-to-table experience, giving you the opportunity to reserve your own Iberico pig and be part of its journey from pasture to plate. Customers select their pig early and can follow along as it is raised with care on open pasture, fed a thoughtfully crafted diet, and grown to optimal size. Throughout the process, you’ll receive updates and have the option to customize how your pig is finished and processed, including specialty cuts and traditional favorites. This program ensures full transparency, premium quality, and a deeper connection to your food—resulting in a personalized, ethically raised product that’s tailored specifically to your preferences.

Our Process

Selection and Agreement

The process begins by selecting your pig directly from 179 FarmS. Once reserved, we’ll walk you through available options and discuss your goals—whether that’s a full or half share, preferred finish, or specific outcomes you’re looking for in your final product.

Customized Raising

From there, we take on the full responsibility of raising your pig. Each pig is raised on a rotational schedule to ensure it gets the best rooting available, and fed a thoughtfully curated diet, with optional customization based on your preferences (organic, non gmo). This stage ensures optimal animal welfare and develops the rich flavor and quality Iberico is known for.

Processing

Once your pig reaches the ideal weight and finish, we coordinate humane harvesting and expert butchering. You’ll have the opportunity to select exactly how your pig is processed—from traditional cuts to specialty Iberico selections like secreto, presa, and pluma—along with packaging preferences tailored to your needs.

Delivery or Pickup

Your pork is carefully packaged, labeled, and prepared for either on-farm pickup, self pick up at the processor, or delivery. Every order is handled with care to ensure your product arrives in peak condition - fresh (not frozen), and  ready to enjoy and share.

Pricing and Deposits
  • Suckling pigs: $600

  • For pigs beyond the suckling pig stage: $25/lb based on hanging weight.

  • A 50% non-refundable deposit is required at reservation; remaining balance is due at delivery.

  • Specialty cuts (smoked, cured, etc.) are available at additional cost
